Fresh Kinilaw

Kinilaw. This is another Filipino dish made from raw filleted fish. It is just like Japanese sushi. It is prepared in a bite-sized chunks of raw fish marinated in vinegar, chilli pepper and other spices. Kinilaw is also the best pair for beer. There are a variety of fish that can be used for making kinilaw. Tuna, tangigue or tanigue (sea bass), talakitok (cavalla) and lapu-lapu (grouper) are only some of them.
